Ingredients

For the crust

  • 1 large head Cauliflower, cut into small florets
  • 1 1/2 cup Marinara sauce
  • 2 tbsp Olive oil
  • Black pepper
  • Sea salt

For the topping

  • 2 oz Pepperoni slices
  • 2 cup Mozzarella cheese, shredded
  • 2 tsp Italian seasoning (optional)

Method

1Preheat the oven to 425 degrees F.2In a 9×13 in. glass casserole dish, toss the cauliflower with olive oil, sea salt, and black pepper. Arrange evenly in a single layer.3Roast in preheated oven for about 25 minutes or until a little golden. 4Remove from the oven; let it cool for a few minutes. 5Spread marinara sauce evenly over the cauliflower. Sprinkle with shredded cheese, then top with Italian seasoning (if using). Top with pepperoni slices.6Bring the casserole back in the oven and bake for about 10 minutes, until the cheese is melted and golden.7Once cooked, remove from the oven; let sit for a few minutes. Slice and serve.
