  • 2 cups (7 oz) almond flour
  • 1 tsp (0.2 oz) baking powder
  • 1/2 cup (3.5 oz) butter, melted
  • 2 tbsp (1 oz) coconut oil
  • 7 large eggs
  • 1/2 tsp xanthan gum
  • 1/2 tsp salt


1Preheat the oven to 355 degree F. Line the bottom of a 8.5 x 4.5 in loaf pan with parchment paper.2In the large bowl, fork whisk the eggs for about 1-2 minutes. Add in coconut oil and melted butter. Stir until well combined.3Add in almond flour, baking powder, xathan gum and salt to the bowl. Mix well.4Transfer the batter to the prepared loaf pan. Press the top evenly with your hands, forming a rounded top.5Bake in preheated oven for 45 minutes, until deep golden.6Once baked, let it rest in the oven for 5 minutes; remove and let cool completely. Slice and serve.
You can store your bread in an airtight container in the fridge and use within 7days. Don’t forget to lightly roast them before serving.
