  • 4 oz. celery stalks, finely chopped
  • 2 scallions, finely chopped
  • 5 oz. tuna in olive oil
  • 3/4 cup mayonnaise
  • 1/2 lemon, zest and juice
  • 1 tsp Dijon mustard
  • 4 eggs
  • 1/2 lb Romaine lettuce
  • 4 oz. cherry tomatoes
  • 2 tbsp olive oil
  • Salt and pepper


1In a medium bowl, combine tuna, lemon zest and juice, mayonnaise and mustard. Stir well and season with salt and pepper. Set aside.2Add eggs to a saucepan, and add water until it covers the eggs. Bring to a boil and let simmer for 5-6 minutes (soft-medium) or 8-10 minutes (hardboiled).3Once cooked, remove from pan and place in ice-cold water immediately. Divide them into wedges or halves.4Place tuna mix and eggs on a bed of romaine lettuce. Add tomatoes and drizzle olive oil on top. Season with salt and pepper to taste. Enjoy!
Aside from tomatoes, you can top the tuna mix with fresh vegetables and fruits to your liking (avocado, cucumber…).Also, add some shredded chicken if you like.
