- 4 boneless skinless chicken thighs (about 18 ounces)
- 2 large eggs
- 2 tablespoons heavy whipping cream
- 2/3 cup blanched almond flour
- 2/3 cup finely grated parmesan cheese
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/2 tsp cayenne
- 1 tsp salt
- vegetable oil for frying
1Heat up1 to 2 inches of vegetable oil in a pot over medium-high heat.2To make egg wash, add eggs and heavy cream in a bowl and whisk until well blended. Set aside.3In another bowl, combine almond flour, parmesan cheese, black pepper, paprika, cayenne, and salt. Stir until well mixed. Set aside.4Cut each chicken thigh into 3 evenly sized pieces. Pat them dry with paper towels if moist.5Coat each piece first in the breading, then in the egg wash, and then in the breading again, coating all sides. Shake off excess.6When the oil is ready for frying, carefully lower breaded and coated chicken into pot. Fry until deep brown and cooked through, about 5 minutes, and drain on paper towels. Repeat until no chicken piece remains.7Serve immediately while hot and crispy.
