Ingredients

For the marinade:

  • 3/4 cup olive oil
  • 1 orange, zest and juice
  • 2 limes, zest and juice
  • 8 garlic cloves, minced
  • 1 cup fresh mint
  • 1 cup fresh cilantro/coriander
  • 1 tsp dried oregano
  • 2 tsp ground cumin
  • 1 tsp salt
  • 1 tsp pepper

For the rest:

  • 4 pork loin steaks, butterflied
  • 2 large pickles, length-size thinly sliced
  • 6 slices Swiss cheese, halved
  • 4 sliced ham
  • mustard

Method

1Blend all the ingredients for the marinade together and pour into a large ziplock bag. Add the pork and marinade overnight in the fridge.2Preheat the oven to 350ºF/180ºC.3Remove pork from marinade and spread mustard on the inside. Sprinkle with ham, pickles, Swiss cheese and fold over. Secure with toothpicks.4Heat up a pan over medium heat. Add in stuffed pork and sear for about 2 minutes per side.5Transfer to a baking dish and bake in preheated oven for about 25-35 minutes.6Once cooked, remove from oven. Let cool for 5 minutes. Serve.
