  • 2 oz plain cream cheese, soften
  • 1/4 cup butter, softened
  • 3 cup blanched almond flour
  • 1 large egg white
  • 1/2 cup Erythritol
  • 2 tsp vanilla extract
  • 1/4 tsp sea salt


Preheat the oven to 350 degrees F. Line a large cookie sheet with parchment paper.
In a large mixing bowl, combine butter, cream cheese, and Erythritol. Beat with Use a hand mixer or stand mixer until fluffy and light in color.
Beat in the vanilla extract, salt and egg white. Beat in almond flour, 1/2 cup at a time.
Use a medium cookie scoop (about 1 1/2 tbsp) to scoop balls of the dough onto the prepared cookie sheet. Flatten with your palm.
Bake in preheated oven for about 15 minutes, until the edges are lightly golden. Allow to cool completely in the pan before handling.
