- 20 oz. chicken breast, cooked and shredded
- 1 oz. pork rinds
- 2 cups fresh broccoli (or frozen), cut into small florets
- 1 cup cheddar cheese, shredded
- 1/2 cup sour cream
- 1/2 cup heavy cream
- 1/2 tsp paprika
- 1 tsp oregano
- 2 tbsp olive oil
- Salt and pepper to taste
1Preheat the oven to 450°F. 2Bring a pot of lightly saltwater to boil. Parboil the cauliflower for a few minutes. Drain thoroughly. 3In a deep mixing bowl, combine shredded chicken, broccoli florets, olive oil and sour cream. Mix to combine thoroughly.4Place the chicken and broccoli into a greased 8×11 inch baking dish. Spread them into an even layer, pressing firmly. 5Drizzle heavy cream evenly over the casserole. Sprinkle with salt, pepper, paprika and oregano on top. Top with shredded cheddar cheese.6Into a ziploc bag, add 1 oz. of pork rinds and crush them with either your hands or a rolling pin. Add these crushed pork rinds over the shredded cheese for a crispy casserole top.7Bake for about 20-25 minutes, until the casserole slightly bubbles and the edges brown. 8Once baked, remove from the oven. Let it sit for 5 minutes. Serve.
