Ingredients

  • 1 pound chicken breasts, cut into 1” pieces
  • 2 cups broccoli florets
  • 2 cups baby spinach
  • 1/2 cup shredded mozzarella cheese
  • 4 oz cream cheese
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 3-4 cloves garlic, minced
  • 1/2 cup tomatoes, chopped
  • 1/4 teaspoon crushed pepper (optional)
  • salt and pepper to taste

Method

1Heat up 2 tablespoons olive oil in a large saucepan over medium-high heat. 2Add in chicken, season with Italian seasoning, crushed red pepper, and salt & pepper. Saute for 4-5 minutes, until the chicken is golden and cooked through. 3Add garlic to the pan; continue to stir-fry for a minute until fragrant. Add in tomato, broccoli, spinach, shredded cheese, and cream cheese. Cook for 3-4 minutes more, until the broccoli is tender.4Once cooked, remove from heat. Transfer to a plate. Serve with cooked pasta, rice, zucchini noodles or cauliflower rice.
Aside from mozzarella cheese, you can add in the pan other cheeses like cheddar and parmesan that keep track on your low-carb diet.
