  • 1/2 cup almond flour
  • 2 tbsp coconut flour
  • 1 tsp cinnamon
  • 1/2 tsp baking powder
  • 1-2 tbsp granulated sweetener of choice
  • 3 large eggs
  • 1/4 cup milk of choice
  • 1/4 cup fresh blueberries


1Place all ingredients in a high-speed blender, except blueberries, and mix until they become a thick batter.2Pour batter into a large mixing bowl and stir through blueberries. Allow to rest for 5-10 minutes, to thicken. Add some more milk if needed.3Preheat a greased large non-stick pan over low-medium heat. Drizzle with some oil and spread well. Pour 1/4 cup portions of the batter onto the pan and cover immediately. Cook for 2-3 minutes per side, until the edges golden.4Once cooked, serve immediately, or cool completely before storing in the fridge.
If you prefer flourless pancakes, replace almond flour and coconut flour with rolled oats and a medium banana. And, drizzle the cakes with some honey for a better flavor.
