Ingredients

  • 3 pounds beef brisket, thinly sliced
  • 2 cups beef Stock
  • 1 cup Sour Cream
  • 1/4 cup olive oil
  • 1 small onion, diced
  • 1 pound mushrooms, sliced
  • 2 cloves garlic, crushed
  • 2 teaspoons dried thyme
  • 1-2 teaspoons salt
  • 1 teaspoon pepper
  • 1/4 cup tomato paste
  • 1/4 cup red wine vinegar

Method

1Heat a large saucepan over high heat. Add in oil, onion, garlic and thyme. Stir-fry until the onion is starting to turn translucent. 2Add beef, salt and pepper to the pan. Continue to sauté until the beef is brown.3Add in tomato paste, stir and cook out for 5 minutes. Stir in red wine vinegar and allow to cook for 5 minutes.4Stir in beef stock and bring to a simmer. Simmer uncovered for 1 hour.5Add the mushrooms and continue to simmer for 1 hour more. Once cooked, remove from heat and stir through the sour cream.6Season with salt and pepper, if needed. Serve immediately.
