Ingredients

For the beef:

  • 1 1/2 pounds beef chuck, trimmed and cut into cubes
  • 1 tbsp olive oil

For the vegetables and spices:

  • 6 oz turnip, peeled – large dice
  • 5 oz celery, sliced
  • 4 oz carrots, rolled
  • 4 oz string beans, cut
  • 3 oz onions, diced
  • 2 cloves garlic, sliced
  • 32 oz low sodium beef broth
  • 1/2 cup red wine
  • 2 tbsp tomato paste
  • 2 tsp beef base
  • 2 tsp gelatin powder
  • 1 tbsp porcini mushroom powder
  • 2 whole bay leaves
  • 2 whole cloves

For seving:

  • 4 tbsp butter
  • 1 tsp dried thyme, rubbed
  • 1/2 tsp dried marjoram, rubbed
  • salt and pepper to taste

Method

1Turn pressure cooker on, press “Sauté”, and wait 2 minutes for the pot to heat up. Brown the beef in batches. Bring all the beef back to the pot. Press “Cancel” to stop sautéing. 2Add all vegetables and spices to the pot (except those added after cooking) and stir together. Cover the pressure with the lid and press “Soup” for 1 hour.3Once cooked, carefully do a quick release. 4Remove the lid. Stir in thyme and marjoram. Adjust seasoning with salt and pepper to taste. Stir in the butter. Serve immediately.
